I am not saying syncing music to your phone is a bad thing, it's everybody's 
choice, but you can certainly also download your music from Apple Music for 
offline listening all without iTunes.

I also use iTunes to transfer music to my iPhone.  Everyone talks about 
streaming services, but streaming is not possible on an airplane and Internet 
service will be interrupted on a train going through a tunnel.  I carry around 
hundreds of albums on my iPhone.
