Hi, I don't think you can change Siri language on the fly. You can't however easily change the language you're dictating text in when you use the dictate button to the left of the..
You can do this if you have several keyboards installed on your phone. Then you press the next keyboard button on the bottom left corner of the screen and the dictation language changes at the same time.
