Just in case anyone else is trying to figure this out as well, the answer is to actually select the contact in the contacts app first, and then you can swipe through and tell the phone form which number you'd like to initiate various types of contact. You can then set that as a default, or tell the phone to always call a given contact from the last number you used. Clever.
Thanks again though for your response. I'll certainly keep apple accessibility in mind. And the iPhone 8 will serve you just fine for the next few years until you choose to upgrade.
