Greetings iPhone friends,
When I choose to dictate messages instead of writing them, I use an alternative 
method that allows you to write texts of any length, and it works for texting, 
email, Messenger, or any other writing platform.  It works like this:

Let's say you're sending a text to a friend or colleague. Open Messages and 
compose message.  Chose the person you wish to text, and when you enter the 
edit field and wish to dictate, perform a two-finger dout-pap on the screen.  
You'll hear the tone and can begin dictation.  to pause dictation, perform 
another two-finger double-tap, and voiceOver will say, "inserted whatever 
you've dictated so far.  The process can be continued until your entire message 
is completed to your satisfaction before finally pushing "send."  This method 
bypasses Siri which isn't always as reliable as we wish he or she should be.  I 
hope this helps.
