Hello Richard, Perhaps I am misunderstanding you but, based on the steps you listed, Mail is behaving as expected.
1. In thread View, I reply to a message in an email thread. 2. I delete the thread before my message, which I copied to myself, comes through on the server. 3. My self-copied message gets downloaded into my mail client, after I have already deleted the entire original email thread to which the reply was sent. 4. Now I open the message/new thread, which contains only 1 message, said message being my self-copied reply. As I stated, this is the expected and correct behavior of the client. Now, were I to self-copy myself on a thread, and left the entire thread, intact in my client, then my reply would be included in the thread along with all of the other related emails. A slightly different scenario can be expected when posting to this group, via Apple Mail, but, basically, it’s pretty much the same. This is, in fact, how Apple Mail, for iOS in iOS 13.4 is behaving on my 8 Plus. Again, not saying that you are wrong but, my reasoning suggests that the client is behaving as expected. I replied to Dacia's message, and then deleted the thread. When my reply came through, it showed Dacia's name and that it was replied, but when I opened it, it was just my message replying to hers.
