I do not know that you are missing anything. Either your WiFi router is not maintaining a solid WiFi connection; your iPhone WiFi antenna is bad; or your internet provider is having issues. So, you could either call your internet provider and get them to run their diagnostics; call Apple Accessibility and have them run their diagnostics, or buy a new router and see if that fixes things.
