You may need to hold it longer, and make sure with the other hand, you flick to where it says Apple Watch, and flick back. I have paired at least 10 of these keyboards on a wide variety of phones for clients. Maybe calling Apple Accessibility and doing a screen share so they could see when the k480 pops up would get it done.
