Unfortunately, I believe it is a bug in the latest iOS software updates. It has been happening to me as well. I have an iPhone 7 with the latest software update and when I delete a message it automatically goes back to the beginning of my messages. So I have to scroll back through them and get to the one I want to delete. Every time you delete a message it jumps back to the beginning of the inbox. I don’t think there’s a way around it.
