You have a few ways you can launch an app on your iPhone: 1. You can place focus on it on the screen where it's located and double tap. 2. You can access handwriting in your rotor and type each letter of the app name and double tap on it when it has focus in the results list. 3. Ask Siri to open it. When you have 14 screens of apps as I do on my iPhone, I promise you that asking Siri to open the app is by far and away the fastest of the above methods. The really nice thing about these devices is that they offer multiple ways to accomplish the same task and you can choose the one that works best for you. I also think it's a good idea to be familiar with the multiple ways in case your needs change at some point.
