Hi Kerri, I don't know anything about color visor, but I'd say that iOS 6 sluggishness on the 3G S is due to the limited ram and processing power that phone has, compared to the newer models. Someone in the family has a 3G S as well, and I've used VoiceOver on it, and it's just as sluggish as you described. I'm not really sure there's anything you can do to rectify it, since it seems to be hardware problems.
