Hi Don, Ioana is correct, you must be accidently doing a 2-finger double tap which will start playback for whatever you were last listening to and, if you have everything closed/removed from the app switcher then music will start playing even though this does not actually open the music app.
Just try to find out when this is happening so you can pay attention to which gesture you may have performed and which registered as a 2-finger double tap. One time this can happen, for example, is when you are on a phone call and want to do a 2-finger double tap to hang up. If the other party already hung up your side may have already disconnected automatically and instead of the 2-finger double tap hanging up the call it will start playing music.
