I've never had anything start playing when I plug in earbuds. I had to travel in my job a few years ago and we would rent a car, and most of those were newer cars and I noticed that the ones that had the USB port double as a connection to the speakers as well as providing power would start playing music automatically. I think that is some mysterious function of those units. Once I discovered that, I just made sure I was ready to stop it as soon as it started.
As for the pausing a bard book and waiting too long and ending up with music, I don't have an answer other than having to go back to bard on the phone and manually start the book.
