I've never gotten into the habit of using Siri to open up apps for me. I suppose if I were only ever going to use a voice interface with that app, I'd be more likely to use Siri to open it up, but since I'm going to be touching the screen once the app is opened up anyway, I'm just in the habit of double tapping on the app. This is why I only have one page of apps with my most frequently used apps on it. For all other apps, those I don't use all of the time, I just go to the app library. I do a three finger flick up to alphabetize them and then they're easy to find.
