Welcome to the joys of the Airpods Max. You can check the battery through the first page/widgets page. Do the three finger swipe from left to right on your home page on the phone so the widgets show up. If the battery one isn't there, you can add it by finding the customize button. Then, the battery level will show. I do not know why the heck it isn't showing accurately in the status bar....
The only solution I've found for the watch grabbing the Airpods is to take them off, turn them sideways so they disconnect, put them back on. Or, open Bluetooth settings on the phone and select them again. Perhaps we all should start writing Apple about these items.
