Apple requires multiple steps in iOS 14 to turn a text message into a contact to prevent cluttering contacts. First double tap the message. Then double tap the phone number from where the message was sent. In the next window, double tap info. A new pop up menu appears and double tap the selection named info again where you can save the text message information in your contacts.
