That rotor option is not available during a call. However, if you check your 
screen there is a button called "Audio". If you are not using a headset that is 
labelled "Speaker" and lets you switch between having the audio come from the 
phone's internal speaker or external speaker. Of course you can usually do this 
by simply taking the phone away from your head unless you disable this, but 
when a Bluetoot headset is connected this button is called Audio. It is the 
third from the top after Mute and Keypad and before Add Call. You may have to 
Hide the keypad to see these buttons if after the call has started it is all 
you see on the screen, the Hide button is at the very bottom.
Once you tap this Audio button you should have 3 choices: iPhone, Speaker and 
Bluetooth Device Name, just now I tried this with my Logitech H800 headset and 
it said "H800".
If I tap iPhone the call goes to the phone's internal speaker, Speaker puts it 
on the external speaker and H800 puts it where one would expect, on my 
Bluetooth headset.

On the iPhone there’s usually a rotor option that will be labeled audio 
destination and then you can flick down and choose from there I believe. 
Someone can correct me on this one though.
