Hi, if you turn off backups on that phone, it won't back up either. I think it will also ask if you want to delete the existing backup.
You can also remove backups from iCloud at any time by choosing the button with your name at the top of Settings, then iCloud, then Manage Storage. Choose the Backups button. Each device that is being backed up is listed along with how much space it takes up. Double-tap the one you want to delete. There's a delete Backup button on that page that will delete the backup and stop backing up to that device.
