You could get VoiceOver to the start of what you want to copy, make sure the rotor is set to lines, then pinch your two fingers together before touching the screen, once your two fingers are touching the screen, spread them apart from left to right, not up and down. Repeat that pattern until you have everything selected. Then, turn the rotor to edit and flick up or down to copy and double tap. I assume you already know how to then paste it.
I find this works a lot of the time, but sometimes, it seems that VoiceOver ends up selecting more than I want, so it is still a bit of a trial and error process for me.
