I'll show you how to get your normal face time sound back. When 15 launched wide spectrum audio mode is active by default. While in a face time call, open control center and at the top of the screen you'll see something about the mic. Double tap there and you'll be presented with two options, voice isolation and wide spectrum audio. This is under the main control center and not the face time options. It would be much more convenient if Apple had placed those options in the face time options.
