I am not sure what the connection is between updating iTunes on your PC and iOS 15. Yes, you may need the latest update of iTunes if you want to use iOS 15 and connect your phone to the PC, this has always been so, everytime a major iOS update came out usually you also had to update iTunes. However, the latest version of iTunes should be backwards compatible with iOS 14, iOS 13 etc.
What exactly are you doing to update your iTunes on the PC ands what exactly is the error message you get?
