May be Apple doing things, my recommendation would be to upgrade to iOS 15 where all of this is done on device now and SIRI for requests as well as dictation is way more responsive in my opinion. Since I upgraded I never once had SIRI tell me "One moment please" while it was trying to process a simple request. I should mention however that I think you need at least an iPhone X or XR for this, I don't think it works on the iPhone 8.
