First of all there is the obvious place, Settings > Sounds and Haptics
Then under Voiceover Settings > Audio you have another "Sounds and
Haptics" item. Here you can turn Sounds off or adjust their volume and the
same for haptics. As Jennifer already said you can adjust the intensity or
turn haptic feedback off altogether, but there is also a heading called
Interactions" where you can fine tune what haptic feedback you get.
I find that the "no item discovered" is a good one to turn off, but there
is a ton of stuff you can adjust here and you just have to play around with
it.

you can change either the intensity of the haptics or turn them off
