If you simply took a photo with the back camera it would just be a photo. If you had tapped the "Photo Viewer" button in the camera app the last photo is what would have been displayed. If you go into Photos I usually tap on the Album tab at the bottom and then go into "Recent Photos" near the top, this displays all my pictures and I can then start from the bottom again and find the latest photo which you can identify by the date and time when it was taken since I assume you know roughly at what time you took the photo.
