As for the IMEI number, one is for the physical SIM, which is likely the first one, and the other one, IMEI 2 that is for the eSim. Give them whichever one you have. IF you are not sure, give them both.
As for the Apple Watch, Once your 12 Mini is your primary phone, ask them again about activating cellular on the watch. I only have a Wi-Fi only watch, so I don't know that process. If it requires a very tiny SIM card, I could see why you would need to go in. Perhaps check with Apple?
