Here is what I found in an Apple support article: To find a specific app, tap the Search field at the top of the screen, then type (Apple Watch Series 7 only), or use dictation or Scribble to enter the name of the app. You can also browse trending categories of apps by tapping a category.
So it would appear that unless you bought a new series 7 Apple Watch you can't search except to use the work-around Richard described or search on your iPhone and then install the app on the watch.
