Sounds like what you were looking for isn't in the more information section, but one thing I forgot to add is that your AirPods need to be connected before you'll see those gestures you can change in the more information.

So, I did what I should have done and searched on Google for the touch gestures for the AirPods 3rd generation. It turns out that these gestures are preset and you can't change them like you can with the 2nd generation or the Pro an Max models. So, that is something that I obviously didn't know before I bought them! The gestures are very easy; Press once to play/paus, or answer the phone Press twice to go forward a track Press 3 times to go back a track And press once and hold to ask Siri a question. They do sound pretty good though; have to get used to the Spatial audio but I can also turn that off.
