Hmm, I’m not sure how this works for other settings, but I have my iPhone set up to not put new apps in my home pages. They just show up in the App Library. If I want to move them to my home page or into a folder I can just drag them from the App Library. I can do a three finger swipe down in the App Library to get rid of the default folders and just list my apps alphabetically.

Apple does this automatically, based on the content inside the folders. Thus, your social media content is categorised accordingly. So, to prvent this automatic categorisation, you can rename each of the originating folders and their subfolders containing social media content; then move these folders into different places.
