I just did a Google search for "Recording a Google Meet session in iOS" and 
here is what the featured snippet from the web (the first result) showed:

After reading the more detailed article it would seem that only certain people 
can record and that recording can only be done from a computer. It would seem 
that somebody who simply joins the meeting via an iOS app cannot record the 
meeting. Of course if you have a second iOS device you could record the audio 
from the meeting simply by starting a recording in the Voice Memo app or any 
other audio recording app you may use or you could set up an iPhone on a small 
tripod facing a computer screen or iPad screen and start a video and this way 
record both the other screen and the audio similar to how you could put a 
regular phone call on speakerphone and record with a second device.
