Hi, You can find all the keyboard commands at Applevis.com under guides. Unless you reset the phone, the pairing should not have to be done more than once. The rotor is pressing the up arrow with either left or right arrow at the same time. Up and left turns counter clockwise and up with right turns it clockwise. VoiceOver keys (control and option together) and the letter k puts you in keyboard help mode, then as you press different keys or combinations, VoiceOver will tell you what that does. Hitting escape gets you out of keyboard help mode.
