Every app is different, but typically you only get the option to add a boarding pass to the wallet at the time you check in for your flight and that can only be done within 24 hours of your flight. The wallet app is for things like credit/debit cards you set up for Apple Pay, loyalty cards and, in the case of travel, boarding passes etc. I don't think you can have your actual itinerary in the wallet app, this should be easily available in the Expedia app. I use electronic boarding passes with Air Canada all the time, but as I said, once you get the email that you can now check in for your flight, you can then add the boarding pass at the end of the check-in process and of course it is best if you check in on your iPhone and not on a computer; not sure if you can add boarding passes to the wallet if you are not using your iPhone to check in.
