I have my phone and iTunes setup to sync my apps anyways. This means that if
I have previously set it up to sync, as an example, Skype and I then delete
Skype from my iPhone, I only have to sync with iTunes to get Skype back. I
don't have to select it because I already selected which apps I want to sync
and which I don't want to sync. If I do this and if I haven't updated Skype
yet on iTunes then the old version will be installed again on the phone. Of
course this means if you check for updates after you do this you will get
once more the notification that Skype has an update and you just have to
ignore this. There is unfortunately no way to hide updates, so if you have
let's say 3 updates and 1 of them is the app you don't want to update you
have to make sure you don't say "update all" and update your other apps one
by one.
If you set up iTunes to sync a particular selection of apps and you updated
an app on the phone but not yet on iTunes, then when you sync the newer
version from your phone will sync back to iTunes. This is why it's important
to first delete the app on your phone and then sync. If you sync first then
the app in iTunes will be updated.

So Sieghard, you're saying I must delete the new version of the app from my
phone, then plug it up to the pc, open up iTunes, and cync apps, and then I
can find the older version of the app to put back on the phone?
