Go into Settings > Bluetooth and select more info for your bluetooth speaker. Make sure the speaker type Is not headphones.

The control that moves it back is the audio output picker in Control Center. Choose iPhone there and the speaker stays paired, you just stop sending anything to it. Powering the speaker off does the same job the blunt way. Here's the part that'll bite you tomorrow. Most Bluetooth speakers reconnect on their own the second they're powered up and in range, so you'll be right back here without touching anything. If that's what's going on, the fix isn't on the phone at all, it's switching the speaker off when you're done with it. Does it grab your audio the moment the speaker powers on, or only once you start something playing?
