You set up each account separately, so I would assume you can change
your name accordingly. If you already have an iPhone, I'd suggest going
in there and setting up your accounts and seeing how you like everything
and if you can customize the things you want. I use the built in mail
app for both personal and business email, but I don't send many emails
from my business account on my iPhone, so I can't answer all of your
questions.
