I can only be of help with your first question.

If you have the latest firmware installed, you can turn VO on and off from a popup menu you get by pressing and holding the menu button on the apple remote. One of the choices will be VoiceOver. The position of the VO choice will be the first when in the main menu as I recall and the second when anywhere else like in Netflix for example. In that case the first choice becomes back to main menu and the second choice is VO. Very easy to use even if you have VO turned off. Note that you have to enable this menu under general/accessibility. The option is called Accessibility Menu. HTH
