Hi Arnold, When your iPhone is connected to iTunes, go to your phone under Devices, then tab until you get to Encripted Backup, it's a checkbox and, if I remember correctly, it's towards the end, after you tab past where you can select to backup to iCloud, enable syncing via WiFi etc. If you check this once and then tell it to backup it will do the encrypted backup and the checkbox will stay checked until you uncheck it.
