The iPhone apps you install on your iPad usually have a button in the bottom right-hand side which is labelled something like switch to full screen mode. This enlarges the app to fit onto the iPad's size, instead of being a small rectangle in the middle of the iPad screen.
By the way, the switch to full screen mode button is a toggle, so you can switch back to the smaller mode if desired.
