Hi,
After you have taken the picture in the Create New Document screen,
Double tap on the Page 1 of 1, for example.
Instead of hitting recognize in the upper right corner, check along the bottom 
of the screen and the fourth button is Readability.
Double tap it and you will find a couple options along the bottom of the 
screen, black, which is selected, white, then a picker item called readability 
which is on 50 percent.  I don't have something to test on, but once you select 
the White button, the apply button in the upper right becomes active.
