Other is the field name applied to any new contact created from clicking on an email address or phone number On a webpage, in Mail, or in an app. It's a placeholder name. If you want to change it, double-tap on the button that says other next to the field. A list of options will appear. Just double tap on the one you would like. Sometimes, you have to double-tap on it twice in succession. The first time seems to select the option, while the second time applies it.
If you want to apply a custom label, that is, a label that you create yourself, move down to the last option in the list of options, which is called "Custom Label," and double-tap it. Type your label into the edit box that appears, and then hit done. Then, double-tap on the label you have just created to apply it.
