As far as I know, it isn't possible to create folders in the Messages app.
If you want to create folders and place your games apps in that folder
then follow Dawn's instructions below, i.e. double tap and hold on a
game app and move it over on top of another game app. When you lift your
finger, a folder will be created with those two apps in it. It'll
probably already be titled Games, but if not, you can edit this.

about text messages or email messages or phone messages or what?
Alternatively, are you asking how to create a folder and move an app,
