Hi, if you have anything newer than 6.1.3 you will not be able to jailbreak. Once you jailbreak you can use an app called PWNTunes which will allow you to copy and paste music into your iPhone's my music folder and then it will build the database for the Music app to play the music as if you had synced it via iTunes. However if the only reason you want to jailbreak is because of a problem in iTunes, you might want to explore that problem first and see what's up with it and perhaps get that fixed. I don't want to assume, but it sounds like you are trying to fix a rip in your pants by making that rip bigger first in order to eventually patch it, rather than just patching it up the right way to begin with. Don't get me wrong, I am a supporter of jailbreaking, but I also know it's not for everyone, and most especially if a person is frustrated about something which isn't on the phone directly.

Good luck.
