The notes app would do this unless you're specifically wanting to use your
voice to record your entries rather than enter them as text using a
keyboard.
I do this with grocery lists and either Email them to myself or text them to
my shopping partner and it works well. Once you create a new note, it's
dated and you can edit it as you need to.
I may look like a nerd on the outside, but on the inside... Okay, yeah, I'm
a nerd.
