Hi Ray, It will send as an iMessage whether you are sending to an email address or a mobile number. The key is that the receiver must have enabled iMessage as well and that he registered which email address or addresses they want to use to receive iMessages (or, for that matter, Facetime calls). If you have an iPhone your mobile number and I believe your apple ID email is automatically enabled if you turn on iMessage and you can add more. It's pretty straight forward, just check out the Messages area in the Settings app. Here you can also indicate what you want to use as the default sender information, e.g. you can use your mobile number on a iPhone, but you can also change that so that if a message is sent as an iMessage, it automatically shows up as being sent from your email address. This could be useful if you have an unlocked iPhone and travel to countries where you might buy a local SIM. This way if you send an iMessage to somebody it would show up as coming from your email address rather than some strange international number.
Basically the same rules apply to Facetime calls. Keep in mind that Facetime will become a lot more interesting when iOS 7 comes out since Apple announced in June that in iOS 7 you can choose to do audio only Facetime calls. In fact, I read somewhere or maybe I heard it on a Podcast that there is going to be an actual Facetime app in iOS 7 which looks very much like the phone app in that you can add people to a Favorites list as either regular Facetime or audio only Facetime.
