Isaac, what you said below is not correct. There is no reason why you can't
go back between the virtual onscreen keyboard, a Bluetooth keyboard and
dictation or just between Dictation or the virtual keyboard if you don't
have a Bluetooth keyboard.

I use iOS 7 now, but this was no different in iOS 6 except that in iOS 6 you
had to use the Dictate button to the left of the spacebar on the virtual
keyboard to start dictation. This of course means that the virtual keyboard
is already up on the screen. I have often used the virtual keyboard to type
an email address with a name I knew dictation wouldn't get right or if I
dictated an email or text I would switch to the keyboard to type a word or
name or make corrections. I have also done this using my Apple Wireless
keyboard.
In iOS 7 you can have the onscreen keyboard up and still do a 2-finger
double tap in most edit fields to start dictation. If I get to a world I
know Dictation will most likely get wrong I just do a 2-finger double tap to
stop and let it insert the text I just dictated, then I type the word or
name either on the virtual keyboard or my Bluetooth keyboard and then do
another 2-finger double tap to continue on dictating.

What may happen is that if you have a Bluetooth keyboard connected that you
have to press whatever key on your keyboard to show the onscreen keyboard.
On the Apple Wireless keyboard it is the key at the very top right of the
keyboard, to the right of F12. If you want to dictate and use the Bluetooth
keyboard only and don't care about the onscreen keyboard, you can even leave
it hidden and just use a 2-finger double tap to start and stop dictation and
then if necessary use the Bluetooth keyboard. I know for certain this works
just fine in Mail, Messages, Notes, search fields etc. There are a few apps
where the 2-finger double tap won't start dictation, but that is a
limitation of the app and something the developer should be made aware of so
they can hopefully fix it.
