If you go to appleid.apple.com you can update your Apple ID. In the past, your Apple ID could be a simple username like xyz. Now, however, it has to be an Email address like x...@gmail.com. You can update your Apple ID by specifying a new primary Email address, but if you still use the old system with a username, I don't believe you can pick a new username. You'd have to use an Email address instead if ever you wanted to change your Apple ID.
