Make sure you select to sync selected playlists, genres, artists and albums instead of selecting to "Sync All music".
After that it's easy and as you said, you already saw a list view of your albums with checkmarks. Just arrow through the list, check the albums you want and uncheck those you don't want. When you are done tab to Apply and activate it by pressing the spacebar or enter, then wait until you hear the iTunes tri-tone to indicate the sync is done.. You can press F6 while it is syncing and find the place where it shows you the current status of the sync. Depending on how much music you sync, it can take a while.
