Alan, Many people do not hold their iDevice as vertically or horizontally as necessary to keep its orientation one way. When the device is tilted beyond 45 degrees, the screen changes its orientation so the side is now the top. This means, everything moves. Locking the screen means it will not change where the top of the screen is no matter which direction the device is held.
I usually keep my screen orientation locked so I can hold my iPhone at any angle and have the top remain at the top.
