You can delete emails in a folder by flicking up or down to get to the
delete option and then double tapping. If you're reading a message then
the delete button is at the bottom of the screen, right above the home
key, you can find it and double tap to delete a message.
To lock your screen orientation, go into the Control Center and toggle
that setting. You can get to the Control Center by tapping the top of
the screen to hear a status icon, like the time, and then doing a three
finger swipe up.
BTW, you're subject didn't say anything except that you had some
questions. I'd suggest using a more descriptive subject line and
covering one topic per message. I think you'll find you're more likely
to get an answer that way.
