Pablo, The easiest way to dictate in another language is to add that language to your keyboard layout/language if it is in that list. I am bilingual in German and English and I have the German keyboard added as a second keyboard. This way whenever the onscreen keyboard pops up and I want to dictate an email or something in German I only have to switch to the German keyboard layout and at the same time SIRI will know that I am dictating in German.
