I suggest you go to www.IBlindTech.com and listen to Garth's Podcast about
selecting, copying and pasting text. I can't remember which number it is,
but it is called very similar to what I just put here, Selecting, Copying
and Pasting Text, so it should be easy to find.
Doing this is one of the more tricky gestures and involves using 2 fingers
which you place in the middle of the screen close together and then you move
them apart horizontally. It is called a "Pinch Out" gesture and if, for
example, you turn the rotor to Words, the text you want to select in Your
Messages app will be selected word by word as you increase the distance
between your fingers. 
If you get to the edge of the screen and not all the text has been selected
you can repeat the gesture.
When you are done you now turn the rotor to Edit, then flick down with one
finger until you hear "Copy", then double tap. Your selected text has now
been copied to the Clibboard.
You next would open the Mail app, address the message and then in the body
field once again turn the rotor to Edit, then flick down until you get to
Paste and double tap.

Another, easier way which often works well in iOS 7 is to use the new
4-finger quadruple tap.
This gesture copies the last spoken text to the Clipboard, Voiceover
actually calls it "Pastboard".
You would just touch the message you want to copy, let Voiceover read it
completely and then immediately after it finishes do a 4-finger quadruple
tap.
Then go to your Mail app, start a message and do what I described above
which is to turn the rotor to Edit, flick down to Paste and double tap.
One thing this method does is that it also pastes things Voiceover says like
"link" or "button".
For example, assume you have an email with a phone number or hyperlink and
Voiceover reads the number followed by "phone number detected or the link
followed by "link detected".
If you do a 4-finger quadruple tap and then paste the number or link into
another email, Voiceover would also paste the text "Phone Number Detected"
or "link detected" and you would have to delete this again if all you wanted
was the phone number or link.
But this is still a very useful feature.

OK, I have to confess to some total ignorance here.  I want to take the text
from a text message and place it into an e-mail so I can send it off to
somebody who doesn't have a mobile phone.  Here's my questions:

- How do I select the text I want from the text message?
- How do I then copy it to the work space?
- How do I then paste that text into an e-mail?
- Where can I read about using these edit functions so I can learn how to do
additional things?
