I have worked it out how to change an iMessage to a text message. What you have to do is to send the message as and iMessage and when it comes up after it has been sent I did a one finger double tab and hold on the iMessage and a menu comes up with copy and text. I double tapped on text and the message was sent as a text message. I hope this helps anyone else who has the same problem. I wish Apple stops changing little things like this.
